Baby Gear!

It seems there's something in the water. I don't know how else I could possibly know SEVEN preggers' women at the same time! Seven! I didn't even know I had that many girlfriends in the first place! It's got to be a record of some kind.

I've been asked several times lately ... mostly from those lovely nesting-decorating mommys-to-be, to see pictures of the B-monster's room. You're in luck ladies! I trapped him in his crib, cleaned it up, and snapped a few shots before he could get his hands on anything!

Pretty, Pretty

I have this thing about making pie crust ... pretty much, I hate it. Unfortunately, I LOVE the outcome that is, any kind of yummy pie. So, in an effort to keep from exploding from having to re-roll the top crust of my apple pie 90 times, I went the easier, "no-rolling of the pie dough" route.

Example A: Crumb topping that you would normally put on an apple crisp (it tastes way better than the boring old pie crust anyway ... AND it involves zero rolling)!


Example B: Cute little pie crust cut-outs (brush with an egg-wash before baking to make the cut-outs shiny and brown) to make it fall and Thanksgiving-ish!


The result? An empty pie plate.

Cake in Abundance.

Today I'm channeling the days where everything was homemade, canned, and pressure-cooked. Pantries were lined with the fruits (and vegetables) of your labor ... and cake?

Now, for those of you that know me, you know my sweet tooth controls just about every aspect of my baking. And for those of you that don't know me, just know, I'm THAT girl. The girl that eats cake for breakfast, skips lunch to stop by the bakery for an eclair, and HAS to have dessert every night after my one decently healthy meal for the day, dinner. When I was pregnant with my son and had gestational diabetes ... I truly thought I wouldn't make it two days without sugar.

Last month, I was perusing my mother-in-law's cookbooks (thanks, Gayl!) for something new, and I came across this lovely little recipe for cake-in-a-jar. Apparently, once sealed, these moist and tasty little guys have a shelf-life of up to a year! Good luck not gobbling them up before that though! The recipe here is for Applesauce Cake, and it's a super-moist Gingerbread with little bits of apple ... how do I know what it tastes like? I've already cracked open a jar ...

Oh yes, some people ... normal people ... have canned vegetables in their pantry, no thanks. I'm well on my way to having rows of canned CAKE!!! Here's the final product, followed by the super-easy recipe!

And just as a side-note, this is perfect to send in care-packages to family members for the holidays, or to soldiers stationed away from home—just make sure to send utensils, too!


Ingredients:
2/3 C. Shortening
2 2/3 C Sugar
4 Eggs
2 C. Applesauce
1/3 C. Water
3 1/3 C. Sifted Flour
1/2 tsp. Baking Powder
2 tsp. Baking Soda
1 1/2 tsp. Salt
1 tsp. Cinnamon
2 tsp. Cloves
6-8 wide mouth, pint-size mason jars; seals, and rings (make sure they're wide mouth so the cake comes out in one piece!)

Step One: Find a cute little assistant (like the one pictured below) to help with the mixin' and measurin'.


Step Two:
Cream together the shortening and sugar. When you're done, it should look all fluffy and pretty, like this:


Step Three:
Beat in the eggs, one at a time (Don't skip this part and add them all at once. Yes, I'm talking to you)! Once you've spent ridiculous amounts of time cracking open eggs and mixing them in, it should look like this:

Step Four:
Add the applesauce (I used 1/2 applesauce and 1/2 sliced apple, using chunky applesauce would have the same effect) and water; set aside.

Step Five:
Sift together (and yes, you actually have to sift it all) flour, baking powder, baking soda, salt, cinnamon, and cloves.

Step Six:
Blend dry ingredients into applesauce mixture to form a lovely batter, like this (insert your own cute mixer, I'm hanging onto mine!):

Step Seven:
Use wide-mouth mason jars (or whatever brand you like ... I'm just partial to mason), grease with Pam™ and fill each half-full with batter. Place jars on a cookie sheet and bake in the oven at 325 degrees for 45 minutes (or until a toothpick comes out clean in the center).


Steph Eight:
Wipe jar-rims clean (super important for them to seal correctly!) and place seal and ring on the jars. Once they cool, the jars will seal.


Voila! Cake in your pantry for a year!

Etsy is such a great website for finding fun and original things that no one else has. I could spend hours (and, in fact, have) checking out the awesome things that people make!

Thanks to them, (yes, I'm finally getting back to the reason I just spent five minutes praising their website) my little monster will be donning this fancy-pants outfit VERY soon! It was just too darn cute to pass up!

Bad Case of the Mondays

It's only 9:40 a.m., and it's already been one of THOSE Mondays. But before things fell too far and my day was completely unsalvageable, I opened up my phone and saw this ...

New Moon!

I decided to let New Moon sink in a little before sharing my thoughts. Three hours of sleep is long enough for me! So here goes ...

I'm a HUGE book fanatic. Anyone that knows me will attest to this fact. And although I'm a sucker for a great book, I still like to see the movie after, just to see someone else's interpretation of what the book was to them. But never, in any of my Harry Potter midnight premier years, have I EVER seen a movie premier like last night. Between the beaucoup people, the news crews, the screaming mimi's when the line that was wrapped around the outside of the building started moving towards the door, and the mad rush to find a theater with two seats next to each other, I had a blast. Not usually my scene, but it was a great feeling breaking out of the box a little (although, the two large drinks prior to getting in line probably helped). I don't know that I would run out to another midnight premier like that, but you never know. You just might see me in line for the midnight showing of Eclipse when it releases ... anyone know when that might be?

As for the movie itself? I LOVED it. I always thought that Edward seemed too uptight in the first movie, like he was trying too hard. In the first book, he was obviously still his tall, dark and handsome, serious, mysterious, and way-intense self, but he still seemed to try and make an effort to be more sarcastic with his dry sense of humor in his relationship with Bella. New Moon really brings out some of the humor that we didn't see in Twilight. I laughed, a LOT. Which, is another one of those catch 22's between a book and it's movie. I loved the book. The darkness, the depression, the relationship with Jacob. I know a lot of people thought it was too much, or that it dragged out her losing Edward, but the tension and build up throughout is exactly like that of a 17 year old girl. A 17 year old girl that's completely in love. It might have been over-the-top, but I think it was based on very real emotion.

I'm extremely curious to see how the next movie plays out. I won't go into too much detail (for the minority that hasn't read all the way through, yet ... get on it, people!) but the relationship with Jacob in New Moon was WAY intense. It seemed even more so than it was in the book. I loved that aspect of it, but like I said, I'm really anxious to see how they handle that whole "situation." I certainly wasn't expecting to love Jacob so much!

My only HUGE complaint? I don't like where they ended it. I know the movie was already 2 1/2 hours long, but still! My jaw dropped when the credits rolled. I could go on and on about all the little things, but I won't drag this out too horribly. I'll just say that it's a movie worth watching, several times. And although it's not exactly like the book, I don't think we can ever expect a book-turned-movie to be as such. Go into it knowing you're going to learn to love a vampire and a werewolf at the same time, that the human girl might be a little whiney but all us girls are ultimately just the teensiest bit like her, and that you're going to get to see a LOT of eye-candy. Like, a LOT.

P.S. While my heart has opened up a bit more to Jacob after last night. I'm still Team Edward, 100%. Now, if you'll excuse me, I have a second date with the third book in this saga I read awhile back. Something about a wedding? ...
